Take your fried chicken to the next level with this kicked up buttermilk fried chicken recipe.
Every now and then you need a little spice in your life and this fried chicken recipe gives you just that! This extra "kwispy" buttermilk fried chicken recipe gets kicked up with hot sauce, cajun seasoning, and Kev's Hot Honey Parmesan Sauce.
Here's what you need:
1 family pack tray of chicken wings
peanut oil
Wet batter:
4 cups buttermilk
2 cups Texas Pete hot sauce
2 eggs
1/2 cup Hidden Valley Ranch seasoning
1/2 cup Kinder's The Blend Seasoning / Salt, Pepper & Garlic (SPG)
1/2 cup Sazón Goya seasoning
Dry Batter:
4 cups all-purpose flour
1/2 cup Hidden Valley Ranch seasoning
1/2 cup Kinder's The Blend Seasoning / Salt, Pepper & Garlic (SPG)
1/2 cup Walker & Sons Slap Ya Mama Cajun seasoning
1/2 cup Sazón Goya seasoning
Kev's Hot Honey Parmesan Sauce:
3 cups Texas Pete hot sauce
1 stick Kerry Gold garlic & herb butter
1 cup grated parmesan cheese
3 cups honey
Here's how to get that extra kwispy fried chicken
First, prepare the wet batter by combining the buttermilk, hot sauce, eggs, and seasonings in a large bowl - whisk to blend well. Place all chicken in the bowl of wet batter - cover and set aside to marinate. While the chicken is marinating, prepare the dry batter in a medium bowl by whisking the flour and seasonings together. Remove the chicken from the wet batter and place on a baking pan with a rack to allow the excess wet batter drip off. Start breading the chicken by placing each piece of chicken in the dry batter, then placing each piece on a second baking pan with a rack, to allow the excess dry batter to fall off. Heat your oil in a large skillet until the oil reaches about 350°F. Fry the chicken in small batches so that you do not overcrowd the chicken, until golden brown, 8 to 10 minutes. Shake off any excess oil and place on baking pan with a rack to drain. Continue frying the chicken in batches until all of the wings are cooked.
Now for the Hot Honey Parmesan sauce
In a medium saucepan, combine hot sauce, butter, parmesan cheese, and honey. Allow to come to a boil. Reduce temperature and allow to simmer for 6 to 8 minutes, stirring frequently.
Plate your chicken with your favorite side and drizzle on the hot honey parmesan sauce, or pour it into a small bowl/ramekin if you prefer to have your sauce on the side.
